This is Where We Make Cheese
The creamery, located in Basalt, Colorado, is compact, efficient, clean and organized. We bring the milk over from the Farm and Dairy in Paonia, CO. Goats’ milk is processed at the Creamery where it is made into five cheeses: fresh Chèvre, Ashed Rind Chèvre, Cabra Blanca, Midnight Blue and Hand-bandaged Goat Cheddar. Kevin McCullen is the head cheese maker working with Wendy.
