Avalanche Cheese Company operates a USDA meat processing plant in Basalt, CO. Avalanche makes a variety of fresh and Old World style dry cured salumi. There are two styles of salumi; one is a goat and pork blend and one is 100% pork. Both styles come in a variety of flavor profiles. Avalanche uses sustainably raised pork and goat meat from our farm in Paonia.
Curing Room Visits
The Curing Room is located at 216 Cody Lane in Basalt, CO, and tours may be scheduled by appointment. There is a small fee for tours which covers the cost of protective clothing required when touring the facility.
